Here I share my favourite vegan recipes that are not only delicious, but they are vibrant, wholesome and designed to nourish you from the inside out with vegan and vegan curious followers.
These Vanilla Blueberry Caramel FroYo Bites are a delicious no-bake snack full of protein and fibre, made with a few simple ingredients. Dipped in dark chocolate, they are ready in 10 minutes and naturally vegan.
I love frozen yoghurt clusters or bites, and have made quite a few for my website and social media over the years. These ones have to be some of the best as not only are they gut-friendly thanks to the coconut yoghurt, they are also high protein using a simple vanilla protein powder. I have added in some fresh blueberries for crunch and then spread them with a simple maple syrup and peanut butter caramel before freezing. Dip into your favourite dark chocolate and these are ready, waiting for you in the freezer for those hungry moments.

What ingredients do I need?
You can see the ingredients with weights in the recipe card and see my favourite and recommended products in the “shop the recipe” section.
For the bites:
Coconut yoghurt: make sure it’s thick and creamy like the Cocos Organic yoghurt which has simple natural ingredients and is great for the gut.
Vanilla protein powder: I use Form vanilla protein powder which is made with organic pea, brown rice and pumpkin seed proteins.
Fresh blueberries: or you can try chopped up strawberries or raspberries.
Smooth peanut or almond butter: the smoother the better for the caramel. You can also use tahini or sunflower seed butter to make them nut-free.
Maple syrup: to make the caramel. You can also use agave syrup or honey.
Flaky salt: for the salted caramel.
Dark chocolate: you can use your favourite dairy-free dark or milk chocolate and I like the Raw Halo chocolate buttons as they are made with only simply ingredients.
Coconut oil: this helps the chocolate to set quickly and making them less likely to crack.
Desiccated coconut: this is optional for sprinkling on top.
These Vanilla Blueberry Caramel FroYo Bites are a delicious no-bake snack full of protein and fibre, made with a few simple ingredients. Dipped in dark chocolate, they are ready in 10 minutes and naturally vegan.
Ingredients
300g thick coconut yoghurt
60g Form Performance Vanilla Protein Powder
160g fresh blueberries
3 tbsp smooth peanut or almond butter
2 tbsp maple syrup
A pinch of salt
200g dark chocolate, chopped small
1 ½ tbsp coconut oil
2 tbsp desiccated coconut
Instructions
Line 1-2 trays with parchment paper (ones that can fit in the freezer).
Add the yoghurt and protein powder to a bowl and stir to a thick creamy mix.
Fold in the blueberries so they are evenly dispersed.
Scoop the yoghurt mix into 9 rounds (using spoons or an ice cream scoop) and flatten them slightly.
Stir together the peanut butter, maple syrup and salt for the caramel.
Spoon the caramel on top of the yoghurt rounds and then place in the freezer for 4-6 hours or overnight.
When ready to coat the bites, melt together the dark chocolate and coconut oil in a heatproof bowl over a pan of simmering water.
Dip and dunk each frozen yoghurt round into the chocolate and allow the excess to drip off. Sprinkle with desiccated coconut while the chocolate is still wet.
They will set within a few minutes and then eat straight away or store in a sealed container in the freezer for 2-4 weeks.
