Quick Protein Cinnamon Rolls for 2 (Vegan GF-Option)

A small batch of quick, no-yeast cinnamon rolls with a soft fluffy 3-ingredient dough and a sticky sweet cinnamon swirl. Top these vegan rolls with some icing sugar glaze and they’re a delicious warming bake ready in 30 minutes.

There are so many reasons why I wanted to make these quick and easy small-batch cinnamon rolls:

  • Cinnamon rolls are delicious
  • They’re cosy, warming and comforting
  • Sometimes we just want a small batch of something 
  • We don’t always have time for yeasted bakes

When we’re busy but still want something light and fluffy, these Quick Protein Cinnamon Rolls for 2 are the answer. I thought about turning them into a mug cake, but I’ll save that for another day as I really wanted to still get the amazing “roll” aspect to these cinnamon buns.

What’s special about these Quick Protein Cinnamon Rolls for 2? Mainly that they require no yeast, no proofing and no waiting around. The dough is pretty magical, made from only 3 ingredients: 

  • Self-raising flour (GF if needed): this adds the natural fluffiness and rise to these bakes. Make sure you use a GF blend with xantahm gum although they won’t turn out quite as fluffy as the ones pictured but still, they are delicious.
  • Vegan protein powder: I used the Vanilla Chia flavour from Garden of Life (you can find out more here and use code AMY25 for 25% off)* for these cinnamon rolls and the flavour combination was delicious! The warming spices work really well with the sweet cinnamon, although I also think a vanilla one would work really well. It is important to note that all protein powders behave slightly differently so you may need to adjust the amount of yoghurt you add to reach a dough consistency.
  • Thick vegan yoghurt: it needs to be thick! I like coconut yoghurt the best or a vegan-Greek style is great. You may need to add more or less depending on how much liquid your protein powder absorbs.

That’s all we need for the dough; stir it all together and then work it with your hands for about 1 minute to bring it all together. It will be soft and pliable but not too sticky and wet. Roll it out and then brush with melted vegan butter or margarine and then the cinnamon sugar (literally cinnamon and brown or coconut sugar).

The next step is to roll up the dough, working tightly so the rolls keep their shape and then slice into 2. Bake them in greased muffin/cupcake holes, brushed with extra vegan butter/margarine. While they cook, stir together the icing sugar and water and then drizzle this liberally over the cooled Quick Protein Cinnamon Rolls for 2.

These rolls really are so simple but so good – they got the thumbs up from my family who couldn’t tell they weren’t yeasted buns. They’re light and fluffy with a cinnamon sticky sweet filling, a slightly golden and chewy outside and a really yummy icing sugar glaze. Make these Quick Protein Cinnamon Rolls for 2 when you fancy something delicious and cosy with a cup of tea mid-morning or afternoon and be ready to be in cinnamon roll heaven!

They are naturally vegan, packed with protein, able to be gluten-free and refined sugar free (if using coconut sugar and no icing sugar) and so easy!

A small batch of quick, no-yeast cinnamon rolls with a soft fluffy 3-ingredient dough and a sticky sweet cinnamon swirl. Top these vegan rolls with some icing sugar glaze and they’re a delicious warming bake ready in 30 minutes.

Ingredients

  • 80g self-raising flour (can use GF)
  • 20g vegan protein powder (I used vanilla chai protein)
  • 130g thick vegan yoghurt e.g. coconut
  • 15g brown or coconut sugar
  • 1 tsp cinnamon
  • 10g vegan butter, melted
  • 50g icing sugar
  • 2 tsp water

Directions

  1. Preheat the oven to 160Fan/180*C and grease two muffin holes.
  2. Stir together the flour and protein powder. Now add in the yoghurt and bring to crumbly dough. If it’s too wet, add some extra flour or if it’s too dry add some more yoghurt. Tip on to a lightly floured surface and bring together with your hands, kneading for about 1 minute.
  3. Roll the dough to an oblong 30cm x 14cm.
  4. Stir together the brown sugar and cinnamon.
  5. Brush the top of the dough with most of the melted butter and sprinkle over the cinnamon sugar. Using the shorter edge, tightly roll up the cinnamon roll into a log and slice in half.
  6. Place each roll into the muffin hole and press down slightly, making sure the edge of the dough is secured to the roll. Brush with the rest of the melted butter and bake for 16-17 minutes until golden and crisp on the outside and soft in the centre.
  7. Stir together the icing sugar and water. Allow the rolls to cool slightly before drizzling over the glaze. Best enjoyed the same day.
