Rich and chocolatey peanut butter rocky road bars packed with rice crispies, nuts and mini marshmallows topped with pretzels and gummy bears. These bars are easy to make in 10 minutes and make a delicious festive or year-round snack.
I love any excuse to make my sweet recipes slightly festive, and these Chocolate Peanut Butter Gummy Bear Rocky RoadsΒ are no exception. I had some gummy bears lying around (thanks to these ones – use code AMY20 for 20* off)* and thought about a few recipes to make with them and then I thought more about the actual gummy bears. I used to love them as a child, so having them again takes me straight back to my childhood and having after-school sweets in the car on the way home or the giant pick βnβ mix youβd have at the cinema. And what else reminds me of childhood?Β Rocky road, for sure! Itβs basically a good reason to add lots of yummy things to melted chocolate, let it set and then eat it as a bar β so you get sweets and chocolate in one!
These Chocolate Peanut Butter Gummy Bear Rocky Roads have a few delicious things added to them, but they are quite flexible depending on what you have to hand:
Simply melt together the chocolate and peanut butter, stir in the other ingredients and then pour into a lined dish. Now it is time to decorate with the pretzels (GF if needed and star-shaped for the festive season) and gummy bears! I also added on some sprinkles for the fun of it!
Now all you have to do is wait for the bars to set in the fridge for 1-2 hours and then slice into bars. Itβs often easier and more fun, to slice them into irregular shapes, or you can go for normal bars or squares.
These no-bake, vegan, gluten-free and delicious chocolate snacks are so easy to make in a few steps. They are fun to make with little ones and are a great dessert or afternoon treat any time of year, especially in winter. Switch up the crunchy ingredients for any combination of flavours.

Love rocky road and aww π never heard of the above gelatine free gummy bears reminds of Haribos bears. Ahh I canβt have haribos and been longing to find gelatine free sweets and vegan π±. Just couple of questions for you: Which mini marshmallows brand food you like to use, also do you use the normal rice Crispie Kelloggβs and of course I would swap the peanut butter. I donβt have any nut butter could I use biscoff spread or can I use Norty spreads from Elspeth I have. Is this nut butter? Hi Sophie, Norty spreads are nut butters so you can use those or Biscoff spread would work, too. These marshmallows are FreedomMallow and yes rice krispies are fine! x

You can use any dark chocolate, this one is Divine Chocolate. But Lindt would be good (they are not all vegan) x
