Baklava-Inspired Weetabix Jars (Vegan)

These Baklava-Inspired Weetabix Jars are deliciously creamy, healthy and taste just like dessert. Packed with warming spices, crunchy pistachios and jammy dates, these jars are vegan, wholesome and easily gluten-free.

If you love all things dessert for breakfast then these easy jars are perfect for you and they are ready in less than 10 minutes. Made with just 7-8 basic ingredients, they are easy to prep ahead of time or to make as soon as you want to eat them. Inspired by my love for all things pistachio, sweet sticky dates and orange, these taste just like the much-loved Baklava pastry dessert only in breakfast form.

Why will I love these?

These jars are so fun, they are:

  • Naturally vegan, dairy-free and egg-free

What ingredients do I need?

The ingredient list is simple and you can shop my favourites in the “shop the recipe” section below.

Here’s what we need:

  • Weetabix: I used the golden syrup Weetabix for this recipe as the golden, sweet taste is perfect for the Baklava dessert which typically uses honey. These were made as part of my ongoing work with Weetabix and I love getting creative.
  • Plant-based milk: use your favourite milk like oat, almond, soya or coconut (from the carton).
  • Thick coconut yoghurt: I always use Cocos Organic either the vanilla or natural yoghurt here. It’s best to use a thick and creamy yoghurt for the best texture.
  • Orange: this adds so much flavour with just some zest to lift the jars.
  • Spices: I love adding cinnamon and ground cardamom or you can use mixed spices, too, for the warming notes.
  • Medjool dates: these are sticky, sweet and so jammy. I prefer medjool dates but you can also use other dried fruits like apricots, figs or raisins.
  • Pistachios: these are great for a pop of colour and crunch. You could also try walnuts or pecans or use sunflower seeds to make them nut-free.

There are a few optional ingredients to make the jars more exciting:

  • Pistachio butter: this adds so much flavour and is fun to swirl inside the jars. You can swap this for tahini or sunflower seed butter. This is one I like.
  • Pomegranate: for some fruity goodness on top and a pop of colour and juiciness.

Are these gluten-free and nut-free?

These are easily gluten-free, just use gluten-free Weetabix-style biscuits and to make these nut-free, swap the pistachios for sunflower seeds and the pistachio butter for tahini or sunflower seed butter.

How do I make them?

These are so simple to make:

  • Crush the Weetabix and add to a bowl: stir in the milk and yoghurt.
  • Add in the orange and spices: and sit for 5 minutes.
  • Pour in the chopped pistachios and dates: and stir well.
  • Divide some yoghurt and pistachio butter between two jars: to prep them.
  • Top with the delicious Weetabix mix: and top with more yoghurt, pomegranate and nuts to serve.
  • Enjoy straight away: or keep for later.

How long will they last?

These are great to make ahead of time and keep in the fridge for 1-2 days.

These Baklava-Inspired Weetabix Jars are deliciously creamy, healthy and taste just like dessert. Packed with warming spices, crunchy pistachios and jammy dates, these jars are vegan, wholesome and easily gluten-free.

Ingredients

For the Weetabix:

  • 4 Weetabix Baked with Lyle’s Golden Syrup
  • 240ml plant-based milk
  • 120g thick coconut yoghurt
  • ½ orange, zested
  • ½ tsp ground cinnamon
  • ¼ tsp ground cardamom, or mixed spice
  • 2 medjool dates
  • 20g pistachios

To Serve:

  • 4 tbsp thick coconut yoghurt
  • 1 tbsp pistachio butter
  • 2 tbsp pomegranate
  • Extra pistachios

Instructions

  1. For the Weetabix: crush the Weetabix into a bowl and pour in the milk, yoghurt, orange zest, cinnamon and cardamom. Stir well and leave to one side.
  2. De-stone and dates and roughly chop these along with the pistachios.
    Fold the dates and pistachios into the Weetabix mix and leave for 5 minutes.
  3. To serve: spread some pistachio butter on the inside of two jars and spoon some yoghurt into the bottom. Top with the Baklava Weetabix mix and smooth over the top. Add on some extra yoghurt, pomegranate and pistachios.
  4. Enjoy straight away or keep in the fridge for 1-2 says, covered tightly.
