Iced Pistachio Matcha Mint Shake (Dairy-Free)

This Iced Pistachio Matcha Mint Shake is cooling, refreshing and so delicious. Naturally sweetened, packed with veggies and protein and so easy to make, this shake is delicious.

I love matcha powder and one of my favourite summertime drinks is a matcha shake, packed with ice and cooling ingredients. It’s also such a popular drink from a coffee shop, at vast expense, so these homemade shakes offer a great alternative to make at home – and they are so much more delicious and healthier, too. Even if you don’t love matcha powder, you will adore these shakes as there are other ingredients, natural sources of sweetness and lots of ice to cool down.

Why will I love these shakes?

These shakes are so delicious, they are:

What ingredients do I need?

The ingredient list is simple and you can find my favourites in the “shop the recipe” section:

  • Banana: this adds some sweetness and makes the shakes thicker.
  • Frozen courgette: this adds some vegetable goodness to the shake as well as a creamy texture, chop a courgette into smaller pieces and freeze overnight.
  • Thick coconut yoghurt: I always use natural or vanilla Cocos Organic yoghurt as the ingredients are great, packed with gut health ingredients and it’s delicious.
  • Smooth pistachio butter: I love pistachio butter as it’s so packed with flavour. I prefer smooth but you can use crunchy, too, as it will blend up.
  • Matcha green tea powder: make sure you matcha tea powder is 100% ceremonial matcha and is a high quality for the best flavour. my favourite matcha is from Matcahaeologist and it’s so fresh and not “grassy” at all. Dirtea also do a delicious matcha blend which would be great here.
  • Fresh mint: fresh is always best to make these drinks really fresh.
  • Vegan vanilla protein powder: this adds so much sweetness and vanilla flavour which works so well with the matcha.
  • Hemp seeds: I love to add some goodness to these shakes without adding flavour or texture.
  • Ice: this makes the drinks thicker and so fresh.
  • Plant-based milk: use your favourite dairy-free milk like oat, almond, soya or coconut (from a carton).

Are these gluten-free and nut-free?

These are naturally gluten-free and to make them nut-free, swap the pistachios and pistachio butter for sesame seeds and tahini or sunflower seed butter.

How do I make them?

These are so easy to make:

  • Add all of the ingredients to a blender: and blend until smooth. I use the Salter NutriPro which works so well to crush ice.
  • Spread some coconut yoghurt into two jars: and pour in the shake.
  • Top with more yoghurt or cream, matcha and pistachios: and sip away.

How long will they last?

These are best enjoyed straight away so drink up.

Ingredients

For the Shake:

  • 1 ripe banana
  • ½ courgette, previously frozen in chunks (80g)
  • 120g thick coconut yoghurt
  • 60g (4 tbsp) smooth pistachio butter
  • 1 tbsp matcha green tea powder
  • 2 sprigs fresh mint, leaves only
  • 1 scoop (25g) vegan vanilla protein powder, optional
  • 1 tbsp hemp seeds
  • 1 small cup of ice cubes
  • 180ml plant-based milk

For Serving:

  • Extra coconut yoghurt or cream
  • A few ice cubes, optional
  • Extra pistachios
  • Matcha, to sprinkle
  • Fresh mint

Instructions

  1. For the shake: add all of the ingredients to the Salter NutriPro, secure the lid and blend until smooth and creamy.
  2. Into two jars spread some coconut yoghurt and add some ice cubes. Pour in the matcha shake and top with more coconut cream or yoghurt, crushed pistachios, matcha powder and mint.
  3. Enjoy straight away.
