These Lemon Blueberry Blended Oats are creamy, delicious and ready in just 10 minutes, with no overnight soaking required. They are naturally vegan, gluten-free and high in protein while tasting like dessert.
I am back with another 10-minute breakfast winner in the form of these lemony and berry-packed creamy oats. Like my other no-soak breakfast recipes, these oats rely on boiling hot water and a blender to make the creamiest oat mixture that is perfect to eat in the morning or to prep for the next day. They are loaded with lemon and blueberries for a balanced, fruit-filled, fibre and protein-packed breakfast that will become an instant winner.

What ingredients do I need?
The ingredient list is simple and you can see my favourites in the “shop the recipe” section below.
For the oat mixture:
Oats: make sure these are gluten-free, where needed.
Boiling water: this quickly softens the oats so that they are easier to digest and they swell up, creating a smoother and more filling mixture.
Vegan vanilla protein powder: this is great for adding protein to the breakfast jars, as well as flavour and natural sweetness. I love the vanilla buttercream protein for this one but any will do.
Banana: the ripe banana adds natural sweetness to the mixture as well as creating a lovely texture. If you prefer, you can use applesauce, too.
Seeds: I use chia and flax seeds which help to thicken these oats and to add omegas, as well. I love to add in some hemp seeds, too.
Lemon: fresh lemon zest adds so much flavour to these oats so they are so delicious and lemony.
Thick coconut yoghurt: I also use the Cocos Organic natural or vanilla yoghurt as it’s really thick and creamy and contain live bacteria which is great for gut health.
Plant-based milk: you can use your favourite dairy-free milk here like soya, oat or almond.
Fresh blueberries: or you can use frozen blueberries too. I like to warm some up to make a quick blueberry compote to make these oats really creamy and then also add in some whole fresh blueberries, too.
Granola: you can use any granola you like for layering into these jars and adding on top. I like to use my Banana Cookie Granola or a shop-bought one.
Are these gluten-free and nut-free?
Yes these are naturally gluten-free, as long as your oats are certified gluten-free and check your granola, too. To keep these nut-free, check that your milk, yoghurt, protein and granola do not have any nuts.

How do I make them?
These are easy and quick:
Add the oats and boiling water in a bowl: and leave for 5 minutes.
Blend together the oat mixture with the other ingredients: until smooth.
Warm up some blueberries: to make a gooey compote.
Layer up the oats with blueberries, yoghurt and finish with more granola: and eat straight away or save until later.
How long will they last?
These are great to eat straight away or cover and keep in the fridge for 2-3 days.

Ingredients
For the Oats:
80g oats
200ml boiling water
30g vegan vanilla protein powder
1 ripe banana
1 tbsp each: chia seeds, flaxseeds, hemp seeds
Zest of ½ lemon
60g thick coconut yoghurt
60ml plant-based milk
80g fresh blueberries
For the Layers:
120g blueberries
100g thick coconut yoghurt
2 tbsp granola
Lemon zest
Instructions
For the oat soak: pour the hot water over the oats and allow to sit for 5 minutes and stir.
To blend the oats: add the soaked oats with the protein powder, banana, all the seeds, lemon zest, yoghurt and milk to a food processor or blender and process till smooth. Stir in the blueberries.
To make the blueberry jam layer: warm the 120g blueberries till sticky and gooey.
To serve: spoon some yoghurt into two jars, top with some gooey blueberry jam, the blended oats and top with more yoghurt, blueberry jam and the granola. Add on some lemon zest, if you like.
Enjoy straight away or cover and keep in the fridge for 2-3 days.
Notes
You can use 100g applesauce instead of the banana, if you prefer.
