Vegan Banana Cream Pie Jars (Healthy)

These delicious Vegan Banana Cream Pudding Pie Jars are creamy, crunchy and so amazing. They are also vegan, gluten-free, high protein and made with good-for-you wholesome ingredients that taste like dessert for breakfast.

These are another recipe to add to my delicious speedy breakfast series that makes you feel as though you’re eating dessert first thing in the morning. I actually do love these for an afternoon snack or after-dinner dessert, too. whatever time of day you enjoy these, know that you’re having so much goodness, with fibre, protein, carbohydrates and fruits all together in each mouthful. They really are amazing and are inspired by American Banana Cream Pie pudding:

Why will I love these jars?

What ingredients do I need?

The recipes are broken down into a few sections, and you can see my favourites in the “shop the recipe” below.

For the granola cookies:

  • Banana: this adds sweetness, crunch and a delicious banana flavour to these granola cookies which serve as our cookie crumbs.
  • Peanut butter or tahini: I love using peanut butter or tahini equally for this recipe so use whatever you have on hand (also almond or cashew butter work great). The best thing is to make sure the nut/seed butter is runny and smooth.
  • Maple syrup: for a little sweetness and to keep the recipe refined sugar free. You can also use agave syrup or vegan honey.
  • Oats: the base for all good granola mixes. Make sure your oats are gluten-free certified where needed.
  • Vegan protein powder: you can use any flavour of protein powder here, like vanilla, cookie dough or salted caramel.
  • Seeds: I love using hemp and flaxseed to make this granola mix really crunchy and with some added goodness.

For the banana filling and serving:

  • Banana: for sweetness and flavour, as above. Some banana is blended and some is for decorating the glasses.
  • Thick coconut yoghurt: I use the Cocos Organic yoghurt as it’s so thick and creamy and the original or vanilla flavour work well here.
  • Plant-based milk: use your favourite diary-free milk here like organic soya, oat, almond or coconut (from the carton).
  • Ground flaxseed: do not swap this for another seed apart from chia seeds as these are important for texture, thickness and creaminess.
  • Vegan protein powder: as above.

Are these gluten-free and vegan?

Yes these are gluten-free as long as your oats are certified GF and to keep this nut-free, use tahini or sunflower seed butter and check your ingredients like yoghurt and protein. How do I make them? These are easy to make in a few steps:

  • Make the granola by stirring together the ingredients: and air fry or bake till golden and crispy.
  • Blend together the filling ingredients: until thick and creamy.
  • Layer up the jars with some banana cookie granola: with some extra yoghurt, banana slices and all of the delicious filling.

How long will they last?

These are great to make ahead of time, although the banana cookie granola will soften over time, so you can always add this just before eating. Keep the granola in an airtight container for 3-5 days and the banana mix will keep for 2-3 days, covered well in the fridge.

Vegan Banana Cream Pudding Pie Jars (Healthy)

These delicious Vegan Banana Cream Pudding Pie Jars are creamy, crunchy and so amazing. They are also vegan, gluten-free, high protein and made with good-for-you wholesome ingredients that taste like dessert for breakfast.

Ingredients

For the Granola Cookies:

  • ½ ripe banana (50g)
  • 45g runny, smooth peanut butter or tahini
  • 1 tbsp maple syrup
  • 100g oats
  • 15g vegan protein powder
  • 1 tbsp hemp seeds
  • 1 tbsp ground flaxseeds

For the Banana Pudding:

  • 1 ½ ripe bananas
  • 200g thick coconut yoghurt
  • 50ml plant-based milk
  • 4 tbsp ground flaxseeds
  • 60g vegan protein powder

For the Jars:

  • Extra coconut yoghurt
  • 1 banana, sliced
  • 2 tbsp runny peanut butter

Instructions

  1. For the granola cookies: mash the banana well and add in all of the ingredients. Stir to a sticky mix. Break the mixture up with tour hands into smaller pieces and arrange on a lined tray. Preheat the air fryer to 120ºC and bake for 15 minutes, turning over the granola a few times to that it cooks evenly. The smaller pieces will bake more quickly, so keep an eye on those so they are all golden and crispy. Allow to cool. You can also bake these in the oven at 120Fan/140ºC for 15-20 minutes.
  2. For the banana pudding: add all of the ingredients to a blender and process until smooth and creamy.
  3. To serve: spread some peanut butter into 2 large jars and add some granola cookies to the bottom. Fill up halfway with the banana pudding mix then add some yoghurt and banana slices around the edges and continue to use up all the pudding mix. Finally, top with some more yoghurt, banana slices and extra granola cookies (you will have extras). Drizzle over the peanut butter.
  4. Enjoy straight away or cover tightly and keep in the fridge for 1-2 days, although the granola will soften over time. Keep the leftover granola cookies in a sealed container for 1 week.

    Quick and easy to make, and delicious! Made 2 jars this morning…ate one for breakfast, and saved one for tomorrow’s breakfast…got greedy and ate it for dessert tonight instead…now none left for breakfast tomorrow! 😭
