Chocolate Coconut Bounty Blended Oats (Vegan GF)

Thick, creamy and tasting like Bounty bars, these Chocolate Coconut Bounty Blended Oats are easy to make in less than 10 minutes with healthy, vegan and gluten-free ingredients. They are great for a quick breakfast or snack.

I just love all things chocolate and coconut and wanted to turn this into a breakfast recipe that tastes as indulgent as dessert yet it’s made with breakfast-foods. The combination of this 10-minute recipe is divine, it’s thick and creamy, chocolatey and coconutty while being nutritionally balanced and easy to make. It’s a go-to on busy mornings and can even be made ahead and kept in the fridge for the next day.

What ingredients do I need?

The ingredient list is simple and you can see my favourites in the “shop the recipe” section below.

For the oats:

  • Oats: make sure these are gluten-free where needed.
  • Boiling water: softens and breaks down the oats and makes for the creamiest blend.
  • Vegan chocolate protein powder: this adds so much texture, flavour and natural sweetness to the mix. My go-to is the chocolate hazelnut from Macromike but they have so many other chocolate proteins to choose from like Chocolate Caramel, Deluxe Chocolate and Chocolate Honeycomb – my go AMB-AMY saves you 10% off everything.
  • Cacao mushroom blend or cacao powder: I love the Dirtea cacao mushroom blend for added mushroom goodness (without any mushroom flavour) as it’s super chocolatey, too. You can similarly use cacao or unsweetened 100% cocoa powder.
  • Banana: make sure the banana is ripe for the sweetest, smoothest blend. If you don’t like banana, you can swap this for applesauce or more yoghurt.
  • Seeds: I use chia and flaxseeds for thickening the mix as well as a boost of nutrition and hemp seeds for their goodness, too.
  • Desiccated coconut: for adding that bounty bar flavour.
  • Thick coconut yoghurt: my go-to is Cocos Organic as it’s thick and creamy and blends really well. Either use a natural or vanilla one here.
  • Plant-based milk: use your favourite dairy-free milk, I love oat or almond but coconut, soya or rice milk are great.
  • Cacao nibs and flaked coconut: for stirring in at the end. These add great crunch and texture to the otherwise smooth blend. If you don’t have cacao nibs, you can swap these for a handful of chocolate chips.

For the layers:

  • Coconut yoghurt: as above.
  • Dark chocolate: I like to melt some dark chocolate and pour on top of the yoghurt and allow to set for a fun chocolate shell. I use a low-sugar coconut chocolate but you can use any chocolate or swap for cocoa powder or leave off all together.

Is this recipe gluten-free and nut-free?

Yes these oats are gluten-free as long as your oats are certified free-from gluten and keep this nut-free by using nut-free milk, yoghurt, protein powder and chocolate.

How do I make this?

These oats are so easy to make:

  • Soak the oats in boiling water: this works to soften the oats, making them easier to digest when you eat them.
  • Add all the ingredients to a blender or food processor: and blend till smooth. I have a Magimix food processor.
  • Stir in the flaked coconut and cacao nibs: for crunch and texture.
  • Spoon some yoghurt into jars and top with the oats: to reach almost the top.
  • Add on some extra yoghurt and melted chocolate: allow to set or enjoy semi-set.
  • Grab a spoon and dive in: or keep for the next day.

Ingredients

For the Oats:

  • 80g oats
  • 200ml boiling water
  • 30g vegan chocolate protein powder
  • 1-2 tbsp cacao powder (or mushroom cacao blend)
  • 1 ripe banana
  • 1 tbsp each: chia seeds, flaxseeds, hemp seeds
  • 2 tbsp desiccated coconut
  • 2 tbsp (30g) thick coconut yoghurt
  • 60ml plant-based milk
  • 20g cacao nibs
  • 15g coconut flakes

For the Layers:

  • 100g thick coconut yoghurt
  • 40g dark coconut chocolate, melted
  • Extra chocolate and coconut

Instructions

  1. For the oat soak: pour the hot water over the oats and allow to sit for 5 minutes and stir.
  2. To blend the oats: add the soaked oats with the protein powder, banana, all the seeds, coconut, yoghurt and milk to a food processor or blender and process till smooth. Stir in the cacao nibs and coconut flakes.
  3. To serve: spoon some yoghurt into two jars, top with the blended oats and top with more yoghurt, the melted chocolate and the more chocolate and coconut.
  4. Enjoy straight away or cover and keep in the fridge for 2-3 days.
