Here I share my favourite vegan recipes that are not only delicious, but they are vibrant, wholesome and designed to nourish you from the inside out with vegan and vegan curious followers.
These rich no-bake Berry Granola Chocolate Fudge Bites are the perfect make-ahead snack or dessert. They are fruity, chocolatey and melt in your mouth with a hidden granola layer, too.
I love making no-bake recipes, especially in the summer when you don’t want to switch on the oven. These delicious bites require some slicing, melting chocolate and stirring and that’s it. The key to the fudge is using your favourite chocolate along with some nut butter and a ripe mashed banana for sweetness. It makes them taste so indulgent while being secretly healthy. These are inspired by my strawberry and puffed quinoa fudge bites which were such a hit, and I realised there are so many variations you can do! For the bites:
Blueberries and raspberries: these are so good for adding a pop of colour and juiciness and fresh is best here. Try other berries or fruits too like blackberries, pomegranate, sliced banana or kiwi.
Granola: I use the peanut butter granola from Paleo Foods which is naturally grain, gluten and dairy-free and is so yummy. You can also use any homemade granola, see my list of recipes here.
Ripe banana: the riper the better as they are softer and sweeter.
Oat mylk or dark chocolate: I love the Raw Halo oat mylk buttons are they are refined sugar free, so chocolatey and made with minimal wholefood ingredients.
Smooth peanut butter: to create a lovely fudge. Or use almond or cashew butter or try tahini or sunflower seed butter to make it nut-free.
These are naturally gluten-free as long as you use GF granola. To make it nut-free, check that your granola and chocolate do not contain any nuts and also swap the peanut butter for tahini or sunflower seed butter.
How do I make them?
These are ready to go in a few steps:
Arrange the berries in a dish: to cover the bottom.
Sprinkle over the granola: to cover the berries and fall in between the gaps.
Melt the chocolate and peanut butter: over a pan of simmering water or in the microwave until glossy.
Stir in the mashed banana: until smooth.
Pour the chocolate mix over the fruits: and smooth out.
Sprinkle over more granola and flaky salt: and set in the fridge.
Remove from the dish and slice into squares: and enjoy.

Ingredients
3 handfuls fresh raspberries and blueberries
20g granola, plus extra on top
1 ripe banana, mashed
120g dark or oat milk chocolate, chopped small
30g smooth peanut butter
Flaky salt
Instructions
Line a 5 or 6-inch (13 or 15-cm) dish with parchment paper.
Arrange the berries all over the bottom of the dish in an even layer. Sprinkle over the granola.
Mash the banana and leave to one side.
Into a heatproof bowl, add the chocolate and peanut butter and warm over a pan of simmering water or in the microwave until melted.
Stir the mashed banana into the chocolate and then pour over the berries.
Spread out evenly and sprinkle with extra granola and flaky salt.
Place in the fridge for 1-2 hours, or until set firm.
Use a sharp knife to slice into 9 squares. Enjoy straight away or keep leftovers in a sealed container in the fridge for 5-7 days or in the freezer for 1 month, wrapped well. Enjoy straight from the freezer or allow to thaw for 20 minutes.
