Banana Strawberry Chocolate Fudge (Vegan Healthier)

This delicious Banana Strawberry Chocolate Fudge is made with just 6 basic wholefood ingredients and tastes so indulgent. It’s rich and chocolatey, melt-your-mouth gorgeous and takes less than 15 minutes to make.

It’s strawberry season right now in the UK, in the height of summer and I just love eating them. As well as snacking straight on the berries, they are so fun to make into delicious desserts, and this amazing fudge is a chocolate wholesome snack that is great at any time of day. While it’s really rich and indulgent, it’s actually made with healthier ingredients, sweetened with banana and contains lots of polyphenols and other gut-friendly ingredients. It comes together in 15 minutes or less and is great for enjoying all summer long.

What ingredients do I need?

You can see the ingredients with weights in the recipe card below and see my favourite and recommended products in the “shop the recipe” section.

For the fudge:

  • Strawberries: the fresher the better and cut into slices to arrange on the base of the tray.
  • Puffed quinoa: this adds a layer of crunch on top. If you don’t have any, feel free to use some puffed cereal or granola, or soya protein crispies.
  • Banana: the riper the better as it’s softer and easier to mash until smooth.
  • Dark or oat milk chocolate: I love the Raw Halo oat milk buttons which are made without refined sugars and only natural ingredients.
  • Chocolate nut butter: I use the Pip&Nut chocolate peanut butter which is so delicious, but you can use another type. Or use regular peanut or almond butter and they will still be chocolatey.
  • Chopped hazelnuts: to add some crunch on top.
  • Flaky salt: this is optional but adds a great saltiness on top.

Is this gluten-free and nut-free?

These are naturally gluten-free and swap the chocolate nut butter for tahini or chocolate sunflower seed butter and swap the hazelnuts on top for cacao nibs or coconut.

How do I make this?

These are ready to enjoy in a few steps:

  • Slice the strawberries and arrange in the tray: to make an even layer.
  • Sprinkle over the puffed quinoa: to cover the berries.
  • Mash the banana: until really smooth.
  • Melt the chocolate and nut butter: until glossy.
  • Pour the chocolate over the strawberries: and smooth out.
  • Sprinkle over the crushed hazelnuts: and flaky salt, if you like.
  • Chill or freezer until set: and then slice into squares.

How long will it last?

These will keep for 5-7 days in the fridge in a sealed container or for 1 month in the freezer.

This delicious Banana Strawberry Chocolate Fudge is made with just 6 basic wholefood ingredients and tastes so indulgent. It’s rich and chocolatey, melt-your-mouth gorgeous and takes less than 15 minutes to make.

Ingredients

  • 4 large strawberries
  • 2 tbsp puffed quinoa
  • 1 ripe banana
  • 120g dark or oat milk chocolate
  • 30g chocolate nut butter
  • 2 tbsp chopped hazelnuts
  • Flaky salt

Instructions

  1. Line a 5 or 6-inch square tin with parchment paper.
  2. Trim off the tops from the strawberries and slice into chunky slices. Arrange these in the dish so they bottom is covered in an even layer. Sprinkle over the puffed quinoa.
  3. Mash the banana until smooth.
  4. Add the chocolate and nut butter to a heat-proof bowl and melt in the microwave or over a pan of simmering water until glossy. Now stir in the mashed banana.
  5. Pour the chocolate fudge over the strawberries and smooth out.
  6. Spread out and sprinkle over the crushed hazelnuts and some flaky salt.
    place in the freezer for 1 hour or in the fridge for 2 hours, or until set firm.
  7. Remove from the tin and slice into 9 squares.
  8. Enjoy straight away. Keep leftovers in the fridge in a sealed container for 5-7 days or in the freezer for 1 month.
