A delicious no-bake recipe perfect for the holidays, this Chocolate Fudge Christmas Salami is made with a handful of vegan and gluten-free ingredients, and you can add in whatever fruits, nuts and cookies you like.
I love anything chocolatey especially this time of year, and I also love a no-bake recipe. So, when challenged to create another recipe showcasing the delicious sweetened condensed oat milk, I had to make something rich, indulgent and fudgy. As it’s Christmastime, I wanted to make something festive, too and after making a salami last year, I knew I wanted to re-make one as it went down a hit with friends and family. The main fudge mixture is similar to regular chocolate fudge and is mainly dark chocolate and the sweetened condensed dairy-free milk, but the fun part is rolling it up into a log or “salami” shape. Add in whatever dried fruits, nuts, mallows or cookies you like and serve in slices.

For the salami:
Dark chocolate: I use the Raw Halo buttons or HU kitchen chocolate, both of which are made with simple, wholefood ingredients.
Sweetened condensed oat milk: this is from Natures Charm and is so delicious and makes for the best fudge texture. They also have a coconut one which is delicious.
Almond butter: make sure it’s 100% nuts and use a runny, smooth one. Or, try cashew or pecan butter or use tahini or sunflower seed butter to make it nut-free.
Gingerbread spices: a mix of cinnamon, ginger, allspices and/or nutmeg.
Salt: for flavour.
Crystallised ginger: truly Christmassy!
Dried cranberries: these are so good this time of year but other dried fruits like goji berries, dates, figs or dried apricots will also work.
Pistachios: or other nuts but I love the pop if colour. Hazelnuts or pecans would also be great or swap for cookies or more dried fruit to make them nut-free.
Vegan marshmallows: use mini ones or slice bigger ones into small pieces. Or use cookies.
This is easily gluten-free as long as your condensed milk is GF and any add-ins. To make it nut-free, swap the almond butter for tahini or sunflower seed butter and the pistachios for more dried fruits or cookies.
How do I make this?
This is ready in a few steps:
Melt together the chocolate and condensed milk: over a pan of simmering water.
Stir in the almond butter, spices and salt: and whisk until smooth. It will start to thicken.
In a bowl, combine all of the add ins: and stir.
Pour in the chocolate mix and stir well: to make a thick mix.
Tip the chocolatey onto a piece of parchment: and compact into a log-shape with your hands.
Wrap up tightly using the parchment: and twist the ends to seal it.
Chill in the fridge to set: for 4-6 hours or overnight.
Un roll the salami and dust with icing sugar: and slice to serve.

Add the chocolate and sweetened condensed oat milk to a heatproof bowl and sit over a pan of simmering water. Stir gently and allow to melt.
Meanwhile, add the ginger, cranberries, pistachios and marshmallows to a bowl and toss well.
Into the melted chocolate, add in the almond butter, spices and salt and stir well.
Pour the chocolate mix into the dry mix and stir well (it will be sticky).
Tip the mixture onto a piece of parchment paper (about 35-cm square). Shape the chocolate into a log about 25-cm in length. Use the parchment to make a log-shape.
Tightly roll up the chocolate log using the parchment and twist the ends.
Place in the fridge for 4-6 hours or overnight, until set.
Unroll from the parchment and dust with icing sugar.
Use a warmed, sharp knife to slice and cut into pieces. Enjoy straight away or keep in the fridge (or at room temperature if it’s not too hot) for 1 week. You can pop it in the freezer, wrapped well, for 1 month, and allow to defrost before dusting with icing sugar and slicing.
