Here I share my favourite vegan recipes that are not only delicious, but they are vibrant, wholesome and designed to nourish you from the inside out with vegan and vegan curious followers.
These delicious Creamy Apple Chia (no) Overnight Oats are creamy, thick and smooth, made with high fibre and high protein ingredients, ready in 10 minutes. These oats don’t require you to soak them overnight and they are fully vegan and GF.
If you are looking to kick start the year (if you are reading this in January) and get your day off to the best start, these no soak oats are ideal. They are just as creamy, thick and luscious as overnight oats, but only need a quick 10-minute soak. They are packed with fibre, protein, omegas and plant points and are perfect for the season. With apples, cinnamon, ginger and a delicious berry topping, these oats are great for Winter but also enjoy them all year round.

What ingredients do I need?
You can see the ingredients with weights in the recipe card below and see my favourite and recommended products in the “shop the recipe” section.
For the oats:
Rolled oats: make sure they are GF where needed.
Chia seeds: to make the oats thick and creamy.
Ground flaxseed: to add fibre and to help thicken the oats.
Vegan protein powder: I love vanilla protein powder but other flavours like salted caramel will also work.
Dairy free thick yoghurt: I love to use NUSH protein yoghurt or Cocos Organic coconut yoghurt as they are both thick and creamy.
Dairy free milk: I like soya milk as it’s high in protein and I use Rude health or Plenish as they are only soya beans and water. Other milk like oat, almond or coconut will also work.
To make the compote:
Apples: chop these small (any eating apples are great).
Frozen raspberries: these are easier to have to hand than fresh but fresh will also work.
Lemon juice: to add some tang to the compote.
Finally, to serve, I love to add some almond butter, extra yoghurt, fresh pomegranate or berries and some crunch like cacao nibs, seeds and/or granola.
Are these gluten-free and nut-free?
These oats are naturally gluten-free as long as the oats are GF and keep it nut-free by using nit-free yoghurt, milk and toppings.
How do I make them?
These are ready to go in a few steps:
Combine the dry ingredients: and then stir in the wet ingredients.
Allow the oats to soak: for 10 minutes.
Warm together the apple and berries in a non-stick pan: until juicy.
Spoon the oats into bowls and top with some berries: and other toppings.
How long will they last?
Keep the oats and berry compote separately in the fridge in sealed containers for 2-3 days.

Ingredients
For the Creamy Apple Chia Oats:
4 tbsp oats (approx. 35g)
4 tbsp chia seeds (approx. 50g)
4 tbsp ground flaxseed (approx. 50g)
40g vegan protein powder (e.g. vanilla flavour)
1 tsp cinnamon
½ tsp ground ginger
120g unsweetened applesauce
120g dairy-free thick yoghurt
300-360ml dairy-free milk
For the Apple Topping:
1-2 eating apples, chopped small
100g frozen raspberries
1 tbsp lemon juice
To Serve:
Fresh berries and/or pomegranate
Extra yoghurt
Cacao nibs, mixed seeds, granola
Almond butter or tahini
Instructions
Start by making the apple oat mix. Add the oats, chia seeds, flaxseed, protein powder, cinnamon and ginger to a bowl and stir well.
Pour in the applesauce, yoghurt and milk and stir well. Leave for 30 minutes (or overnight) to thicken.
Meanwhile, make the topping. Add the apples, raspberries and lemon juice to a non-stick pan and cook over a medium-high heat with a lid on for 8-10 minutes, until soft. Stir the pan every so often.
To serve, divide the oat mix between two bowls, top with some yoghurt, the stewed apples, some extra berries or pomegranate, seeds, granola and/or cacao nibs and a drizzle of almond butter or tahini.
Enjoy straight away or pop in a sealed container and keep in the fridge for 2-3 days.
