Here I share my favourite vegan recipes that are not only delicious, but they are vibrant, wholesome and designed to nourish you from the inside out with vegan and vegan curious followers.
These are rich and delicious Chocolate Blood Orange Baked Oats made with a handful of pantry staple ingredients. They are full of plant-based protein, fibre and taste like dessert.
If you love baked oats, then you are going to love this seasonal spin on breakfast. With blood oranges at their best, I wanted to make the most of the gorgeous fruit, so we have blood orange zest inside the oats and then sliced up orange on the top. The flavour is so good especially when paired with dark chocolate. While tasting indulgent and chocolatey, these are so wholesome, full of good-for-you ingredients and make the perfect meal prep breakfast. I love these served warm or cold with some extra yoghurt and a drizzle of almond butter but they are also good with fresh fruit like berries or banana and or some compote.

Vegan chocolate protein powder: I use Form chocolate peanut or hazelnut protein as the flavours and ingredients are really delicious and all natural, too.
Chia seeds: to help thicken the mix and bind the egg-free batter.
Cacao powder: to make these really chocolatey and add antioxidants.
Baking powder: for the rise.
Plant-based milk: I love soya milk with only 2 ingredients to increase the protein. But, you can use your preferred milk.
Thick dairy-free yoghurt: I use Cocos Organic or NUSH yoghurt as they are both really creamy and made with natural ingredients.
Blood orange: these are great when in season, but if it’s out of season, use regular oranges.
Cacao nibs: for a lovely crunch on top. These are optional and if you are feeling fancy, use dark chocolates chips.
Salt: for flavour.
I love to serve these with more yoghurt and some nut butter, as shown here. Or, add some more fruit like berries or banana.
These will keep for 2-3 days in the fridge, once cooled, in a sealed container. Or, keep them in the freezer for 1 month, and allow to defrost before enjoying cold or warming back up.

Ingredients
For the Baked Oats:
2 ripe bananas (200g)*
200g rolled oats
50g vegan chocolate protein powder
2 tbsp chia seeds
2 tbsp cacao powder
1 tsp baking powder
320ml plant-based milk
60g thick dairy-free yoghurt
1 blood orange, zested and then sliced into 6
1 tbsp cacao nibs
A pinch of salt
To Serve:
Extra dairy-free yoghurt
Fresh fruit/nut butter
Instructions
Add the ripe banana (and applesauce, if using) to an oven proof dish (16x22cm or 20x20-cm square) and preheat the oven to 160Fan/180ºC.
Mash the bananas with the applesauce and orange zest with a fork until smooth.
Now add in the oats, protein powder, chia seeds, baking powder, plant-based milk, yoghurt and salt. Stir to a thick, smooth batter.
Smooth over the top and sprinkle on the cacao nibs. Arrange the orange slices on top and press them in slightly.
Bake in the oven for 25-30 minutes, until firm to touch, golden brown all over and risen.
Allow to cool for 20-30 minutes before slicing into 4 or 6 squares.
Serve warm with your chosen toppings, or allow to cool and enjoy cold.
Keep leftovers in the fridge in a sealed container for 2-3 days or in the freezer for 1 month, wrapped well, and allow to defrost to enjoy. Warm back up in the oven for 10 minutes to re-heat.

*I used 1 ripe banana and 100g unsweetened applesauce.
