This Matcha and Acai Frozen Yoghurt Date Bark is a fun and delicious take on the viral date bark trend with a fro-yo dairy-free filling and a protein packed chocolate top. Naturally no-bake, these are vegan and gluten-free.
I love anything with dates and chocolate plus I also love matcha, so it was only a matter of time before they all came together to make one delicious snack. These bites require no baking and they are made with just a handful of wholesome ingredients that you probably already have at home. They are easy to make in a few steps and are perfect for those hungry moments when you crave something chocolatey. You can play around with the toppings but I love the puffed quinoa stirred through and a sprinkling of flaky salt.

What ingredients do I need?
You can see the ingredients with weights in the recipe card below and see my favourite and recommended products in the “shop the recipe” section.
For the bars:
Medjool dates: the squishier the better.
Thick coconut yoghurt: I use Cocos Organic which is great for a boost of gut-healthy microbes. Make sure the yoghurt is Greek-style, thick and creamy.
Matcha powder: this is from Naturale Bio and is their organic premium matcha. Make sure you use a good quality matcha for the best flavour.
Dark chocolate: I love using Raw Halo chocolate buttons which are so delicious and are made with only a few ingredients.
Acai powder: this is from Naturale Bio and adds a lovely berry flavour as well as lots of antioxidants (it’s a real powerhouse of vitamins and minerals).
Puffed quinoa: this adds protein and a great crunch on top.
Flaky salt: for a lovely saltiness on top.

Are these gluten-free and nut-free?
These are naturally gluten-free and nut-free.
How do I make them?
These are ready to go in a few steps:
De-pit and place the dates on a tray: and squish down flat.
Stir the yoghurt and matcha together: and spread over the dates.
Freeze for 30 minutes: to set firm.
Melt the chocolate and stir in the acai and puffed quinoa: and then spread over the top.
Sprinkle with flaky salt: and freeze again.
Slice into bars: and enjoy.

How long will they last?
These will keep for 2-3 weeks in the freezer in a sealed bag or container.

Ingredients
8-12 medjool dates
120g thick coconut yoghurt
1 heaped tsp matcha powder
90g dark chocolate, chopped small
1 heaped tsp acai powder
10g puffed quinoa
Flaky salt
Instructions
Start by placing some parchment on a large tray.
De-stone the dates and arrange them on the parchment. Place another sheet of parchment on top and use a glass or rolling pin to flatten the dates, making sure they all stick together.
Add the yoghurt to a bowl and sift in the matcha and whisk well.
Spread the matcha yoghurt over the dates and place in the freezer for 30 minutes to firm up.
Melt the chocolate over a pan of simmering water and then remove from the heat. Spoon in the acai and now whisk until smooth. Pour in the quinoa and stir again.
Pour the chocolate over the yoghurt bars and spread out to the edges. Sprinkle with flaky salt.
Return to the freezer for 30 minutes or until set firm.
Use a warmed sharp knife to slice in 9 bars.
Eat straight away or keep in a sealed container in the freezer for 2-3 weeks.
