Coconut Water Overnight Oats (Vegan)

Thick and creamy, these Coconut Water Overnight Oats are an ideal meal prep breakfast made with a handful of ingredients in about 5 minutes. They are naturally dairy-free, easily gluten-free and high in fibre.

Overnight oats are always a good idea to prepare for a quick and easy breakfast, and this recipe is so simple. You only need a few ingredients, and they are ready in no time at all – plus they are naturally a great source of fibre and have a good amount of protein from the chia seeds. I love serving these with some fresh berries and nuts, but other fruits like banana and mango would also work really well. The coconut water makes these oats so refreshing while still being thick and creamy.

What ingredients do I need?

For the oats:

  • Rolled oats: make sure they are GF where needed.
  • Chia seeds: these allow the oats to turn really thick and creamy while adding protein and fibre.
  • Desiccated coconut: for more coconutty flavour and texture.
  • Coconut cream: I use the Natures Charm coconut whipping cream which is so thick and creamy here. You can use other coconut creams or use thick coconut yoghurt.
  • Coconut water: this is the pure young coconut water from Natures Charm and it’s so good. It does not contain any added ingredients and is naturally hydrating and a great source of electrolytes.
  • Berries, nuts and seeds: or your favourite toppings.

Are these gluten-free and nut-free?

These are easily GF as long as you use gluten-free oats and to keep them nut-free, do not add nuts on top.

How do I make them?

These are ready to go in a few steps:

  • Combine the oat ingredients in a bowl: and stir well.
  • Cover and leave to thicken overnight: in the fridge.
  • Serve in bowls or jars with your toppings: and enjoy.

How long will they last?

These will keep for 2-3 days in the fridge, covered.

Thick and creamy, these Coconut Water Overnight Oats are an ideal meal prep breakfast made with a handful of ingredients in about 5 minutes. They are naturally dairy-free, easily gluten-free and high in fibre.

Ingredients

  • 100g rolled oats
  • 2 tbsp chia seeds
  • 2 tbsp desiccated coconut, plus extra
  • 1 x tin Natures Charm Coconut Whipping Cream
  • 360-400ml Natures Charm Pure Young Coconut Water
  • Berries, to serve
  • 1 tbsp crushed pistachios, to serve

Instructions

  1. Add the oats, chia seeds and desiccated coconut to a bowl and stir.
  2. Scoop out 60g of the coconut cream and pour in the coconut water. Whisk or stir until creamy. Now, cover and keep in the fridge overnight. Add more coconut water in the morning, if you like.
  3. Cover the coconut milk tin and also leave in the fridge overnight.
  4. When ready to serve, take out 120g of the coconut cream and whisk until thick and creamy. Save the rest in the fridge, covered and use within 2-3 days.
  5. Divide the overnight oats between two jars, top with the whipped cream and some fresh berries. Decorate with more coconut and pistachios and enjoy.
  6. Eat straight away or cover and place back in the fridge for 2-3 days.
